Savor Summer: New Limited Time Entrées!

While summertime is the prime time for fun, we often find ourselves with a steady diet of ice cream, barbecue from cookouts and fried food from theme parks. As the season winds down and the back-to-school routines settle in, we whipped up five new entrées to help you get back on track to healthy eating. These wholesome dishes are packed with fresh, seasonal vegetables and proteins – don’t let summer end without trying each one!

Shrimp & Spinach Salad
Chilled poached shrimp, spinach, avocado, hard-boiled egg, strawberries, candied pecans, strawberry Dijon dressing, garlic bread

Ahi & Avocado Toast
Chilled sesame marinated tuna, avocado, wheat berry toast, arugula, scallions, lemon zest

Portobello & Goat Cheese Pasta
Portobello mushrooms, spinach, walnuts, pesto, goat cheese cream, garlic, penne

Thai Chicken “Noodle” Salad
Grilled marinated chicken, cabbage slaw, zucchini “noodles,” edamame, sweet ‘n’ spicy walnuts, scallions, cilantro, creamy walnut dressing, garlic bread

Roasted Vegetable Sandwich
Yellow squash, zucchini, Portobello mushrooms, roasted red peppers, fresh mozzarella, spinach, avocado, ciabatta roll, tabbouleh salad
